Where to buy a SIM card in Casablanca?

Maroc Telecom, Orange and Inwi have shops throughout the city and counters at the airport. Morocco requires passport registration for a local line. Maroc Telecom is the one to pick if you are heading into the Atlas or the south.

Does the plan cover Ceuta or Melilla?

No. Both are Spanish cities on the Moroccan coast, so they are EU territory and need a Spain or EU plan - crossing at Bab Sebta takes you out of a Moroccan plan and into a different roaming regime entirely.

Is the train worth it between cities?

Yes, and coverage on it is decent. The Al Boraq high-speed line runs Tangier to Casablanca and the conventional network reaches Marrakech and Fes, holding data for most of the journey with tunnel gaps. It beats driving, and it means you can work en route.
